After I made some delicious apple cider muffins with the fruits of my apple picking trip (haha… fruits!) (somebody needs to teach me better jokes…), I neglected the rest of my apples for quite some time until they were starting to soften and I knew I needed to use them up. I scoured the internet and came across a recipe from Dorie Greenspan’s Around My French Table that David Lebovitz had recreated and shared on his blog. The recipe called for simple ingredients that I already had on hand, and a bit of rum to flavor the cake. It sounded like a winner, so I decided to go with it.
I was in a bit of a time crunch, so I split the recipe up into two pans to bake more quickly, which worked like a charm. The cake batter was simple to put together, however it seemed so soupy when I poured it into the pan I was worried I’d done something wrong. I double checked the recipe, and everything seemed right, so I popped the pans into the oven and hoped for the best.
To my delight, the cakes came out beautifully. The very liquid batter yields a very delicate, custard-like cake, with plenty of apple bites strewn throughout. The apples cook just enough to be tender, but still have a soft bite to them, which was a great contrast to the soft pudding cake. We didn’t even try the cake for a full two days after I’d made it because I didn’t have a chance to photograph it in good daylight until the third day, but by that time the flavors had had plenty of time to sit and marry, and the cake was so flavorful. The rum had an almost dominating flavor, which seemed like it might be offensive at first, but I ended up really enjoying it.
I tried the cake at room temperature first, but quickly came to realize that heated up with a scoop of vanilla bean ice cream on top was definitely the way to go. It was slightly reminiscent to me of apple pie, without the cinnamon and the heavy crust – just pure appley-custardy-puddingy-pleasure. A simple fall delight, for sure. French Apple Cake
From {Sweetly} Serendipity
Ingredients
3/4 cup (110g) flour
3/4 teaspoon baking powder
pinch of salt
4 large apples (a mix of varieties)
2 large eggs, at room temperature
3/4 cup (150g) sugar
3 tablespoons dark rum
1/2 teaspoon vanilla extract
8 tablespoons (115g) butter, salted or unsalted, melted and cooled to room temperature
Directions
1) Preheat the oven to 350ºF (180ºC) and adjust the oven rack to the center of the oven. Heavily butter an 8- or 9-inch (20-23cm) springform pan and place it on a baking sheet.
2) In a small bowl, whisk together the flour, baking powder, and salt.
3) Peel and core the apples, then dice them into 1-inch (3cm) pieces.
4) In a large bowl, beat the eggs until foamy then whisk in the sugar, then rum and vanilla. Whisk in half of the flour mixture, then gently stir in half of the melted butter Stir in the remaining flour mixture, then the rest of the butter.
5) Fold in the apple cubes until they’re well-coated with the batter and scrape them into the prepared cake pan and smooth the top a little with a spatula.
6) Bake the cake for 50 minute to 1 hour, or until a knife inserted into the center comes out clean. Let the cake cool for 5 minutes, then run a knife around the edge to loosen the cake from the pan and carefully remove the sides of the cake pan, making sure no apples are stuck to it.
Serve with crème fraîche (David Lebovitz’s recommendation) or vanilla ice cream.
