I have seen Pompeian olive oil and red wine vinegar in my local grocery stores, but never realized that they have such an assortment of vinegars. You could make a whole array of summer salads with all of these flavors!
May is National Salad and Vinegar month, so Pompeian sent me the Extra Virgin Olive Oil and Red Wine Vinegar (above) to use in my fresh, tossed salad.
Whenever I make homemade dressing with olive oil and red wine vinegar, I use this recipe from Epicurious. But I usually tweak it a bit.
I add one clove of garlic (minced), ¼ teaspoon of Italian seasoning or fresh herbs from my garden. I pour some of the dressing over mixed greens, sliced cucumbers, tomatoes, croutons, and sometimes, I’ll shave some Parmesan cheese over the salad.
When I’m trying to eat as healthy as possible, especially this time of year, I make my own dressing. It tastes fresh and light and it’s inexpensive. Bottled dressing has a ton of sodium and other ingredients I can’t pronounce. Red wine vinegar and extra virgin olive oil has no sodium. For Dave and I, this is the way to go!

Your salad looks so refreshing and delicious! I have been making my own dressing lately too. I found this great honey balsamic vinegar that I mix with a light olive oil.
